Coelette
Rooted in place, Coelette guides you on an exploration of snow-line cuisines by sourcing exceptional ingredients from the region and specializing in traditional techniques honed in the mountains around the world. Located at the corner of King and Pearl, in downtown Jackson, the Coe Cabin was originally built in 1915. Later it became the residence for Ed and Emily Coe who operated a blacksmith shop out of one of the other two structures on the property. Almost everyone knew the cabin as the Sweetwater Restaurant, which operated for more than 40 years.
When Sweetwater closed in 2017, the cabin, along with the other two buildings, were purchased by a local preservationist willing to restore the log structures rather than razing them. Dubbe Moulder Architects was hired to rehabilitate the original 2,100 square feet and to design a 600 square foot addition to be used as a bar complete with a rooftop dining deck. GYDE Architects was hired to reinvent the interior spaces along with the roof top bar area. The project team relished in the opportunity to give the cabin new life.
A rich and moody color palette was chosen to create an intimate and luxurious feel. Accents of gold, brass, and polished wood add warmth and a touch of elegance. Upon entering the Cabin, diners are immediately welcomed to a large bar that showcases a collection of spirits and vintage glassware. The dining room is full of decorative elements, sourced by local design store Mountain Dandy, that compliment the deep, dark tones of burgundy, forest green and navy blue.
